If I use out to lunch, but a monster's bad stuff is go down 2 levels even if you escape (king tut, wight brothers), does out to lunch count as an escape?

So are saying that if you fight against king tut or the wight brothers and you use the out to lunch card you still suffer there bad stuff and lose the levels?

What I'm saying is that sending the monsters away with Out To Lunch is a defeat (but not a kill), so you wouldn't suffer ANY negative effects.

Anytime combat ends and you didn't have to roll a Run Away is considered you Defeating the monster.
