I was refering to Flyndarans suggestion for making Move 5 a five mile per hour pace, which works out to a 12.5 minute mile. And so on.

I think using Running to push paced running may be a good way to go either with skill rolls or adding training bonus, perhaps.

Any thoughts on treating sleep as recovery time or altering when to assess FP costs?

Correct, if you use the basic set rules... but in reality if you walk at a leisurely pace and not heavy load you are much less likely to get such. Though the basic set walking distances are not leisurely pace..

The High tech rules are much better though the hiking is a bit hard there to do without pain.

Either way in gurps normal blisters don't rise to the level of even a single HP of damage. So it becomes flavor text anyway.
Not HP of damage, but definitely pain, enough of it to affect actions.

Or having feet that do not conform to the sizes shoes and hiking boots are sold in* (without spending far more money than properly fitted shoes and boots should be worth).

I used to get blisters all the time. I am an excellent hiker. I stopped getting blisters when I started taping my feet before hiking. And they never slowed me down the following day (as long as I had tape to first aid with - which is where I figured out to tape my feet first. Sadly it took me two years to figure this trick out. Sigh).
