Extra attacks and defenses

I was just thinking about D&D style game play where fighters have extra attacks on a given turn, which I would use Extra Attacks to represent. However I realized I'm unsure how to handle enemies defending from multiple attacks on the same term. Does each attack grant the enemy its own separate defense roll attempt or does a foe only get one defense per turn and ends up unable to defend against the other attacks?

See Dodging, B374-5, Blocking, B375, and Number of Parries, B376.

The target of multiple attacks can try to defend against all of them, but must defend against each separately. He can dodge as many times as he likes at no penalty. He can only block once per turn. He can attempt several parries, at increasing penalties. Those depend on what sort of weapon he's using and if he's Trained by a Master.
