What kind of vehicle do you need to traverse the trackless parts of it; where no checkpoints of any kind exist and borders are esentially unenforcable?

Are there traditional bedu ranging around in it, moving with the grazing, even betweeen national borders?

Are there parts where an ancient ruin of a city could plausibly still lie undiscovered, or is it too widely traversed for that?
The west is mostly empty desert South of the Euphrates. You can drive military trucks across it, although Wadis and other features are challenging. There are bedu, there was some concern about them wandering into the range cone during a mortar shoot we did there.

Note that SSG Akeem Nassir, the Delta operator you asked about in an e-mail, is not a typical SF operator. He's very much at the edge of the human performance envelope and could have excelled at anything he chose to do.

In fact, all of the PCs are world-class at something and some of them are superb at a wide range of activities, as indicated by very high Attributes.
No worries. Most of your Tier 1 folks tend to be on the outer edge of the bell curve to begin with. I've had trouble building a believable Delta/CAG/ACE Operator for under 350 - 400 points. So I'm really curious as to what your build looks like. And I bet you can easily get into the 800+ range for very experienced/skilled veteran Delta guys.

I suspect satellite photos of the whole of Iraq have been examined carefully several times in the past few decades. Of course, the people doing that probably weren't interested in ancient cities, at least not publically.

Would an armoured Chevrolet Suburban have major concerns there? The tires available for the stock model will have been chosen to be as close to off-road capable as possible, in theory, but the SUV hasn't been extensively modified for off-road driving.

And if you happened to be transporting something made from stone or metal that weighed a ton or two, in addition to a team of people, is it likely that your vehicle would sink deeply into the sand? Would you need some special vehicle or would a surplus GAZ be adequate?

You might get stuck. MRAPs get stuck all the time and have to tow each other out.

So, at a minimum, you would want two vehicles?

But why skimp? The cost of surplus GAZ vehicles isn't actually prohibitive compared to many other cost factors in the absolutely-not-evil-plan of the not-at-all-villains.

They would not want to be noticed by United States Force - Iraq or Iraqi Security Forces, however.

How does someone who has a small business in the desert, say fifteen people or less, and who has to transport food and water to them all the time, avoid sending up red flags for US and Iraqi SFs?

And how does that same person, when he has to transport 1-2 tons of heavy stuff up north, minimise his exposure?

Assume that he would prefer to avoid checkpoints, maybe because some of his people are not entirely legally in-country and maybe because he may be transporting less-than-willing passangers.

I imagine that a truck convoy in the desert, photographed by satellites or UAVs, would send up all the insurgent/militant/weapon smuggling flags in the world. But how to avoid that?

People (bedouin mostly, I think) drive trucks all over that desert all the time. I doubt you'd attract much attention if you used old beat-up vehicles. Avoiding checkpoints on the roads is impossible though.
