Default Two-Handed Sword used One-Handed

The rules for two-handed weapons allow for one-handed use if you have over a minimum ST. Longsword, for instance, has such a marking. If used one-handed in this way, would Longsword be wielded using Two-Handed Sword or Broadsword skill?

Broadsword skill.

The skill is about the how of using a weapon, so you use the skill which reflects the methods you are applying. You are just so strong that you no longer require the lifting capacity and leverage of a second hand to use the weapon.

So what do you do if there's no one-handed skill? Like for a Naginata or a Greatsword?

In the DFRPG, you just keep on using whatever skill you were using . . . that's a quick-and-dirty simplification. If you really want to get into the nitty-gritty of this, you'll have to look to GURPS Martial Arts, p. 220.
