For Appearance, let me just throw this in off the top of my head — I don't have my books handy.

3 androgynous
4 very handsome/very beautiful
5-6 handsome/beautiful
7-8 attractive
9-12 average
13-14 unattractive
15-16 ugly
17 hideous
18 androgynous

That would create a pretty good bell curve, with 48.8% of results being "average."

I apologize for the necromancy, but....

00-12 ISTJ Duty Fulfiller
13-17 ISTP Mechanics
18-21 ESTP Doers
22-30 ESTJ Guardians
31-44 ISFJ Nurturers
45-53 ISFP Artists
54-62 ESFP Performers
63-74 ESFJ Caregivers
75-76 INFJ Protectors
77-80 ENFP Inspirers
81-82 ENFJ Givers
83-84 INTJ Scientists
85-87 INTP Thinkers
88-90 ENTP Visionaries
91-94 ENTJ Executives
95-99 INFP Idealists

Consult here: Briggs-Meyer types

Percentages are based on modern humans. You could do better by rolls all the other stuff first and letting that determine modifiers for each of the 4 B-M axes, then roll the axes separately. But that would be kinda scary.

I'm quite amazed sicilians got their personal category in etnicity...

Great work but I think it would be more game-wise if used backwards: usually the need of a quick NPC arise because PC do or need something that wasn't planned. So I dont' care how many blacks work as mechanic; but how many chanche there are that the mec the PC need is black.

No need to: this work is still in-progress.

Well, I tried my Briggs-Meyer and astrology system for getting random personalities. It's not bad, but its not enough. Is it possible to take a list of all real world GURPS advantages and disadvantage, key them to population statistics and internal correlations and make a personality generator from that? THAT would be great. The correlations would be hard for real science, but we could just fudge that - Sadists have a 50% of having Bloodlust, etc
