Lensman style primary Beam. Fire an incredible amount of energy through a fairly standard turbolaser, burning it out in an instant, but creating a balst of incredible power.

Shield Cracker: Does no damage to the ship, but tends to FRY shields to the point where cmplete replacement is needed.

Gravitational Damper: Allows entry into hyperspace in a stronger gravity well than standard.

All specifically disallowed by the original poster - nothing about weapons that defeat shields, and nothing about improved hyperdrive. (Also, as has been pointed out, those are more to do with engineering than science...)

He could be a geologist, studying ancient races such as Yoda’s, strange creatures such as the “living hole” where Jabba held his executions or perhaps writing scientific journals about animal species we have not seen in the old movies (the “space penguins”, or the “sea cows” from the new movies). He could as well be an archeologist/historian, looking for all that stuff gone with the retcons or old tech.

It is cool because the guy shall be travelling the empire, akin to a scientific adventurer; a galactic empire LindyBeige of sorts.

I like the purgill idea but I think it’s best to not go down that avenue.

I love a lot of these ideas but they don’t seem to fit in my head for Star Wars. Does anyone have more ideas?

A treatment for spice addiction.

Mapping the genetic drift of humanity to try to calculate the original location of the homeworld.

Sleep disorders

A tractor-repulsor oscillator to vibrate things to pieces.

Endangered species across the galaxy and how to rescue them from extinction.

Biology of asteroid life. They seem to survive without air food etc. yet still move around trying to eat hapless visitors.

These ideas could easily lead the scientist to out of the way places full of adventure and outposts of those not wanting to be found.

Humans came from Zhell. Sleep disorders is interesting but the tractor-repulsor oscillator sounds too technobabbly.
