Yrth alread has griffins. You new bird would have to be fecund and fast-breeding/growing.

If the new bird was tractable and easy to train, Griffins are neither, they'll be far more popular as mounts. Griffins are also carnivores, if the new bird is a herbivore, the cost of care is vastly less. And I suggest more important than fecundity or fast-breeding.

A recent look at Banestorm reminded me Yrth has hippogriffs; wyverns and pegasi too. Easier to train and ride is necessary but if your.....hrm, let's make it a brilliantly colored giant parrot like a scarlet macaw.....anyway, if is going to have much effect it's going to have to be more common than anything else mentioned so far. You could easily need half a dozen for each city large enough to want a relay station.

Agreed, and maybe as in the "Hawkmoon" novels they could be giant flamingos.

Another tack might be to simply state that the Medievalism of Yttarria isn't what it seems.

In the history of our world's Europe, the period between 1390 and 1450 was far less Medieval in many ways than the period between 1450 and 1510. The cause of this was the printing press, counterintuitive, isn't it?

The Printing Press brought vast numbers of medieval texts, some previously obscure, into wide circulation. In many ways, the Renaissance was put on hold.

Again, in the 19th Century, Europe's fascination with the middle ages led to large amounts of Castle building and far wider circulation of medieval texts than the middle ages ever saw. In the Arab world too. With the wide introduction of printing, many texts from the Arab classical period got their first wide circulation. Islamic courts made far more use of medieval Islamic law in 1890 than in 1790.

Yttarria's history would be vastly different than Europe's. Much of Islam's stagnation came from the fact that the Plague had become endemic in the Islamic lands. European methods of dealing with the plague though acknowledged to be effective in Europe were rejected as non-Islamic. There is no reason for either Al-Haz or Al-Wazif, to follow the same path.

Why not say the Medievalism of the setting is a fashion. The presence of magic and separate non-Human intelligent species, by themselves, would make a society that looks like Earth's Middle Ages wildly unlikely. But, with the Printing Press becoming widespread and a library of books about Earth's middle ages (being shipped to a school in Australia) that got brought over on a surge of the Banestorm, a fashion for Medievalism could take hold.

The bazaar stagnation of the setting would be an illusion. It might last for a generation or two, but it will fade. The logical problems of the setting would melt like ice in July.

I don't know that giant geese is really all that appropriate for "Yrth", but leaning into the existing flying mounts a bit more would be interesting.

In Yrt magic to make flying boats and other exotic transports exist. It is not used because the designers wanted a recognizable place, not a "magic as technology" world.

But as things advance in your campaign making some breakthrough in levitation/flying magic may change the paradigms.

Flying vehicles, even a few of them, may change the way war is done, even more than how a hundred thousand muskets can. If flying vehicles are more readily available they may be used for commercial purposes and for communications.

I'm planning on introducing a big, flying, war ship soon, maybe with a few lighter ones as an extravagant investment from the new Emperor (in my campaign the demon emperor is was killed by the characters). As a show of force and superiority and power. To unify the Empire and make the other kingdoms think twice... of course it will make everyone afraid and ready to strike it down.

Not quite the same scale as a troop ship, yes, but surely it's been thought of. Maybe a really big carpet...
