If you're worried about corralling Ancient Greek and Latin separately (but, I mean, we all say "television" instead of "teletheatron" or "longevision"....) then a Plant mage would be a "phytomancer" rather than an "herbomancer." (Yes, I'm correcting myself.)

"wright" can be a useful term, as can "werker". Both are preferably combined with German roots rather than Latin.
An illusionist could be a "litwerker". Someone who works with sound could be a soundwright, or a noisewerker. Food magic could be called "Vittilwerk", and its practitioners vittilwerkers.

Honestly, a lot of these spells could be considered in the realm of a mesmerist. Maybe the name could do double duty.
But the Greek root for body is soma-, and there is the word somatomancy, meaning body divination. You might also have somaturgy, somaturge, somaturgist. Quote:

Animal: Faunimancer or Zourge (pronounced “Zo-urge”)
Body Control: Physiomancer Food: Nutrimancer Gate: Telemancer or Teleurge Healing: Vitamancer (but I also like Chiurge) Illusion & Creation: Conjurer Light & Darkness: Luminurge Making & Breaking: Sacred Artisan Meta-Spells: Thaumaturge Plant: Florimancer or Botanurge Sound: Sonimancer or Sonurge or Phonomancer or Phonurge For Plants and Animals, I took inspiration from Flora and Fauna. Body Control involves messing with physiology; Food involves nutrition; and Healing deals with vitality. “Tele” means “far”. Where Photo is Light, Phono is Sound. Also, Technology isn't a College; it's four Colleges: Machines, Energy, Radiation, and Metal & Plastic. Treating them all as a single college would be like treating Air, Earth, Fire, and Water as a single College; or Animals, Plants, and Weather; or Body Control, Food, and Healing.
