The problem with trolls is that they're a puzzle monster (to beat them, you have to figure out their weakness) where everyone already knows the solution to the puzzle. Hydras have a similar issue.

Don't give them advance warning, have another reason to use up that alchemist fire, change/remove their weakness, etc. |
