If you remove a Monster from a fight entirely, people can't modify that Monster, but they can still mess with you by doing things like adding a Monster (with Wandering Monster and similar cards, but not a rule such as the Sharks from Booty that requires a monster to be there) or reducing your Treasure haul (as long as it's not using a card that modifies a Monster).

The Orc's Epic ability is instantaneous and must be dealt with immediately. Once that Level 1 Monster appears, the Epic Orc must decide if he's going to use his ability or fight the Monster as is. Once that decision is made, nothing can stop the Monster Munch. Other players can stop the Orc from ending combat right then and there with a Wandering Monster.

If the Orc chooses to fight normally, then you can modify the Level 1, add more Monsters, transfer the combat, etc.
