You should pick up the new Food Service/Autoduel crossover, Taco Truck Stop. It really puts the Vehicles for 4e rules to good use.

It's common for a GURPS template to be a complete thing, and then use lenses to change that, rather than starting with something generic and incomplete and then adding a lens to finish it. So, rather than Food Service Employee with Lenses for Busboy, Dishwasher, Cashier, Cook, etc, you have Busboy, then a Lens that modifies the Busboy template into a Dishwasher, Cashier, Cook, etc.

Of course, in this case, the author didn't actually make a Dishwasher at first, just Busboy with a Cashier Lens IIRC (away from my books), which is why Dishwasher got added later in Pyramid.
