Lagomorphs have huge heads for their size. Facing one that rears up comfortably looking down at me and my puny horse with gleaming eyes and huge teeth... I would drop pellets! To heck with the exact statistics.

Or you could have something like this. An animal that evolved from a rabbit to become something like a deer.

They look more like llamas than deer to me.
But when you modify one animal to fit another niche or size realistically, it's no longer that first animal. A giant X is not really an X any more.

So, smooth gallop? There's nothing smooth about it. It actual takes skill at riding to not find a gallop very jarring.

Let me put it another way. Compared to rabbits, a running horse is very smooth. Take all the jarring motion of a galloping horse and scale it up a notch or two.

"It's a giant freakin' bunny. Who cares what its stats are?" is actually the most appropriate reaction; it shows engagement with the story, not obsession with the rules.
It shows an extreme disregard for rules quality. If there are no game-mechanical differences between radically different mount types, it's because the rules are badly designed.

My fast write up/thoughts on a riding hare. Not perfect, but hey...

Hippty Hopper (Riding Hare)
A large riding hare.

Move 18; SM+1 (2 hexes)
Traits: Domestic Animal: Enhanced move 1; Super Jump 1, Peripheral Vision, Quadruped
Skills: Brawling-12 ; Jumping-12; Mount- 11
Notes: Add Combat Reflexes if trained for battle.

I like it as a good starting point, but I'd lower Will - hares are constantly failing fright check. I would also add Sharp Teeth and Blunt Claws, and I have a hard time picturing a leporid with Combat Reflexes, as mean and tuff as they can be, they succumb to Combat Paralysis and Crit Fail Fright Checks more than any other animal I can think of.

I am now picturing ranchers breaking in their breeding stock of riding bunnies
