That's as much how the GM plays the servitors of Law and Chaos as the actual servitors.

For inspiration from old school gaming other than OD&D take a look at Empire of the Petal Throne and Warhammer FRP. Both have distinctive takes on the theme of Law vs. Chaos which aren't just Good vs. Evil. In particular, the notions of Law vs. Chaos in EPT are deliberately very different because the cultural mores are very different from ours.

The trick to making Lawful /= Good is to emphasize rigidity, formality, intolerance of variation and imperfection, and absolute adherence to formal logic. A powerful and long-lived Lawful being might find it more logical and efficient to exterminate an entire society due to some perceived imperfection than to try to improve it. Lawful servitors never negotiate or make compromises and expect nothing less than perfection from their devotees.

Giving Lawful beings traits like Callous, Indomitable, Intolerance (Imperfection), Hidebound, Low Empathy, No Sense of Humor, Stubbornness, and irresistible Compulsive Behaviors is a good way to make them both frightening and almost impossible for characters to work with.
