Technically it's Chalmun's Cantina, aka the Mos Eisley Cantina. Ackmena (played by Bea Arthur in the '78 Holiday Special) was the nighttime bartender there. (To be fair, even "Chalmun's Cantina" came from the anthology book Tales From the Mos Eisley Cantina, which came out after the Thrawn trilogy breathed new life into the franchise.)

But then, it's the Holiday Special (also famous for introducing and naming Boba Fett, in the animated segment), which has always been in an ambiguously gray area of SW canon.

Conidering a lot of the architecture from within the animated segment would later on be used in the prequels and Fetts presence I'd probably rule at least the animation cannon.

To be fair, it isn't like Boba Fett was made up for the Special. The animated character was based on early drafts of the ESB script and costume test photography.
