Oenology is well covered by "Connoisseur (Wine)" : wine tasting is subjective enough to be considered a kind of art expertise, with a part of history and chemical processes knowledge.
A "professional skill (Winemaking)" should fill the "wine background" of the character here. First, it gives a default in Connoisseur (Wine) at -3. Second, such a field of competence will have little or no impact on the game, so keep it very simple (one all-encompassing skill) with a skill's difficulty Average or lower.
