In Spanish, the literal translation of "Paradise among the Southern Stars" would be "Paraíso entre las Estrellas del Sur" (note the accented i in "Paraíso"). Personally I think "Paraíso en las Estrellas del Sur" ("Paradise in the Southern Stars") would sound better to a native Spanish speaker (=prospective colonist).

I'm not 100% sure about the Portuguese word for Paradise, but I'd bet it is either "Paraiso" or "Paradiso", so a compromise name shouldn't be hard to come by.

That is also correct, but "meridional" is a technical and rather cold word; I wouldn't use it to name a place along with the word "Paradise". In order to attract colonists, I'd use something more suggestive. Hence my example.
