Fencer two weapons question - 2 sabers?

It doesn't invalidate fencer. You just don't get the full benefits of the Fencer talent.

I have a ST 11 Fencer. He wields a saber and main gauche or a longbow. He does quite well. He also has tactics, physicker, and naturalist. He's been a good and well-rounded PC.

I concur. The Fencer gets the Sword Expertise modifier -1 DX for an incoming hand weapon attack. It doesn't add another -1 DX for another fencing sword. The same is true for Sword Expertise. If you add Two Weapons Talent, you don't get another -1 DX for a second weapon.
