My solution was to change trolls. Mine are partially 'elemental' in nature:

Ice Trolls are susceptible to fire, Earth trolls succumb to acids, Swamp (water/plant) trolls fall to cold/freezing... etc. The PCs have never met an "air troll", but they've already tried brainstorming what such a creatures weakness might be.

The problem isn't that the PCs already know the solution, it's that their allowed to prepare for the puzzle in advance. Want trolls to be scary? Don't give them advance warning, have another reason to use up that alchemist fire, change/remove their weakness, etc.
