How does the one-day requirement help all that much? A wizard comes to town, rents a room in the inn or else finds a quiet area a quarter mile outside of town and creates a gate. No one can easily notice such an activity, so making it take a day doesn't do much.
Once created, the Vikings come through, either to a room in an inn (not too convenient, but pretty good surprise attack) or a little ways outside of town. A barn is another good option. It's large and if you can either bribe or quietly get rid of the owner, it's private enough.
I'm not saying the enchantment vision for Create Gate is bad, but it doesn't do much to prevent Gate Vikings. In fact, you've made it a bit easier in one respect. The wizard doesn't need apprentices at all, so there's only one person required to create the gate (although it takes two days). Pretty hard to notice one stranger come to town and keep to himself for a couple of days.
