A concerted and organized effort to get a visible number of convention games going for as many conventions as possible (assuming there are any conventions at that point!) Write several scenarios for convention play, each of which would highlight a particular genre and GURPS' strengths in dealing with that genre. Said scenarios could then be GM'd by SJG staff, Men-in-Black, and/or committed fans at any number of national, regional, and local gaming gatherings.

Make one with the physic blueberry muffin. A very insider joke but amusing.

Lots are doing virtual. I ran Lair of the Fatman in discord for virtual Balticon this year. Used Action templates to make pregens for it.

I mean, yeah, they're GURPS books, but one more or less book in the line doesn't really speak to me as something which commemorated GURPS as a whole. So here's a thing:

Swag. T-shirts with the GURPS logo (yes, I remember the t-shirt kickstarter a while back and even got one of the shirts, but despite what they represented none of them actually said GURPS on them). Also mugs and hats and cell phone cases and all that kind of thing. Dice boxes designed for 3d6 and 6d6. Something that isn't just one more GURPS book or utility, but something which makes GURPS more physically, materially visible. One of the things I've noticed about TFT is that it's getting a bunch of product: play mats, custom dice, puzzles, dice bags, and all that kind of thing. I'd like to see some of that, but for GURPS.
This is sage advice. No one or even ten specific supplements will appeal to all. That's a generic problem of generic systems. But swag that raises the overall visibility GURPS doesn't require a specific genre or play-style preference, or even being a current GURPS fan, to have value. That's probably the right way to be thinking about an anniversary.

A lot of the answers here are answers to "What's on your personal wish list?", which is a valid question, but not one that has much to do with celebrating a specific anniversary for all GURPS fans, old and new.

Ok I want a "We Will Get GURPS Vehicles When We Get It!" T-Shirt!

Also:
-Remastered art of the Yrt map. I know it is less generic but it may look cool enough, maybe as a T-shirt (?).
-The covers of the books are very good as T-shirts too, the mosaic style with multiple arts in black background.
-A coffee mug with a 1d6 "how to answer to a greeting before you get your coffee" table, with the GURPS Logo in the other side. Bonus if the answers get more polite as they go down, so it is also a measure of your politeness relative to how much coffee you take.
-Plushies of the Iconic characters from Infinite Worlds. C31R07 must look very cute.
-A T-Shirt character sheet that you can completely fill with permanent markers

The other common type of thing for anniversaries is various types of nostalgia products to demonstrate how much history there really is there, but most legacy products are already available in their legacy form and a lot of effort to convert to non-legacy (you could convert Orcslayer pretty easily, but it's already past its 35th anniversary as it was released before basic 1e).

Hmm, the 35th anniversary is traditionally coral, though jade is the modern replacement.

Antique feel/look dice maybe.

Combat Cards collectible coffee cups?

(would have said mugs, but it would have ruined the alliteration)

So, swag...FFE has "Traveller I died in character creation" T-shirts, Tunnels and Trolls has "Ha! Ya missed all my vital spots!"

What's the GURPS equivalent of that?

25 points + 40 points Disadvantages?

The Banestorm took me to Yrth but all I got was this crummy head wound?

Swing + 2 Impaling?

There's gotta be something better than that.
