IIRC the Hittites - or someone from around there anyway - used chariots pulled by donkeys, so a mule would definitely not be out of scope.

Maybe for transportation but horses were used on war chariots.

I remember in Seven Pillars of Wisdom TE Lawrence saying the Arab rebels mounted some of their forces on mules, but I can't remember whether this was purely for mobility, or whether they fought from horseback.

From what I have read, those troops were mounted infantry. Ride the mule, get off and shoot, get back on and scoot.
