While in combat, if I force a trap or curse to make my opponent lose his Class/Accent/Race/Style or whatnot, can he lay another one down from his hand, while he is in combat?

Yes. Race and class cards can be played at any time or discarded by the player if he or she so chooses.

As long as it's his turn, of course.

Yes, if it's his turn. Signboy is almost right -- you can discard a Race/Class card at any time. You may play one at any time on your turn.
So if he's helping another player and you curse his Race/Class away, he cannot replace it.
