Question about fairy dust

In the fairy dust rules it says you get fairy dust for helping to defeat a monster (ie in combat), but what if you just play a modifier bonus on the character and that helps them defeat it without you being in the actual combat yourself? Does that count?

No. "Helping" is a game term defined in the rules. It doesn't cover playing potions or one shots into battle on the side of the player.
