Elsewhere in the FAQ a player asked if a munchkin could choose not to run away, to which the reply was no...a Munchkin always wants to run away (even if the PC is hoping for death).

My question is, can a Munchkin initiate combat (instead of Looting the Room)with a creature whose card states: "you can choose not to fight XXXXX and walk away" if the Munchkin is unable to beat the creature, asks for no help and plays no enhancers? I.E. putting himself in a situation where he'll have to run away.

Or even if the monster doesn't have the walk away option...does starting a fight you knowingly can't win seem like a thing your Munchkin would do?

Sure. The reality of things is that the rules do not allow for you to not roll to Run Away (without some card driven exception). The explanation in the FAQ, though giving you some color that's not really important with respect to game play, doesn't say anything less. As for choosing to look for trouble from a Monster you can't beat, or won't fight you, or gives you the choice as to whether to fight or not, that is all perfectly within the rules.
