So, if Something Huge moves Really Fast and I Block its Slam, I take no damage and suffer no Knockback?

When you Block a Slam you're basically stepping to the side while keeping the shield between you and the creature, it continues past where you were standing, you aren't actually stopping its progress, you're just stopping it from hurting you.
Also keep in mind that you can't parry a weapon heavier than your basic lift, as you quoted on p. 376, no reason also why you'd be able to block a weapon heavier than your basic lift either, if you're ST 10 then you can't block a ST 20 animal's Slam and if you try your shield/weapon will be swept aside in the Slam.
Again this is a generic situation, so if you don't get a result you find appropriate then modify it, I'd also add TDMs to boost the effective weight of the attack.
There's also some brief shield damage rules in the box on p.484, they're very generic though, so feel free to tweak those if you really want to keep track of shield HP and penetration.
