Probably because the truck was originally envisioned as a deuce-and-a-half with a cloth top. (Standard army "truck".) It wouldn't support their weight.

Even if it was something like a conventional delivery truck or semi, their cargo compartments are designed to keep the rain off things, not to be a stable platform for heavy battlesuits. They'd buckle and break.
