In "The Siege of AR-515" Nog explicitly states, "I want to earn their respect" which indicates that he at least has absorbed CoH (soldiers).

In "Business as usual", Quark is clearly disturbed at being shunned, especially by Jadzia, for cooperating with an arms-smuggling ring.

And several times he envys others who have a more heroic reputation then Ferengi.

It is clear that Ferengi do have a capacity for "shame" because they are shown either feeling shame or worrying about feeling shame several times in the show.
