Oh and a few more questions. If you have Big Joe and he is a steed then I can put steed enhancers on him right? But then if I change him to a hireling do the enhancers still work, can also put hireling enhancers on him, and and do those enhancers work if designated a steed?

Also if I give Smart Pills to Big Joe as a hireling, when I change him to a steed can I still sacrifice him to run away automatically?

No, because that's not how Steeds work, and you said Big Joe was a Steed. And if you switch him back to a Hireling, Smart Pills won't let you discard him for an automatic escape.
