So a hook can be used as a large knife, a large knife can be used as a main-gauche. Can a Swashbuckler take one-hand for a perma-main-gauche?

Yes, as you should.

Note though you still are SOL for any two-handed task that isn't parrying or stabbing related.

Pretty much this. It's great in a fight. The rest of the time, it's the opposite of great. "You get -4 on tasks possible with one arm but normally executed with two (e.g., most Climbing and Wrestling rolls)." That can be the opposite of fun, especially for acrobatic swashbucklers who like to swing from ropes and so on.

Yeah, I created a character I'll be posting when I get his backstory written up. Basically I wanted to find a way to start with weapon-bond and signature gear in a way I'd never get rid of. A fine, Silver-Coated Balanced Orichalcum hook is affordable for quirk points. And I like signature gear to remain signature gear forever..
