Are there GURPS stats for this weapon somewhere?

It should have inconsequential differences from the AR platform, except it's heavier, and has lower bulk, both on account of the bull-pup design. In the States that design also means you can get a shorter weapon with a full-length barrel at the same legality class as a standard length AR.

Either, but preference to the former.
I need the IDF issue weapon, the LC isn't relevant.

It uses the same bullet and has the same barrel length as the FN MK 16 MOD 0 SV (SCAR-L-SV) in High Tech, so should have the same damage and range - 5d pi, 800/3500. It's a bullpup, so should have +1 Bulk relative to that weapon - Bulk -4 (no *, because no collapsible stock). It might be more reliable, but that's up to you. Empty weight is 7.2 lb, magazines weigh 1 lb. Acc is probably the same (5), RoF is 15, shots are 30+1(3), ST is probably still 9†, Rcl 2. I can't help you with cost or LC, however.

Out of interest is there anything noteworthy about the ARX160 in terms of GURPS stats (ROF and empty weight I can take from the link).

I don't think I've ever seen specific stats for it, but there are stats for 5.56 out of 12" & 16" barrels in other guns.

I've never handled one, but I've seen reviews that indicate that it's no great shakes, especially by Israelite standards. One reviewer opined that it seemed like they'd got the aesthetics they wanted and then created the action as an afterthought...
