So how are these bonuses read?

Is it +3 Bonus unless there is a demon. Then it's +6 instead? Or is it +3 bonus but also +6 against demons

Same for the elephant are the bonuses added or is it one or the other.

You get the higher bonus if you meet the conditions. It's not a second, added bonus.
