Help with One-shot item usage please.
 

I have been looking up and down the rule book and the internet to try and find a ruling on how many one shot items i can use in a single combat phase.

is it just 1 per combat or can i use multiples to get an even larger combat boost?

There's no limit. The rules say, "One-shot Items can be played from your hand," which would allow one to infer that multiple one-shot Items can be played from one's hand. Phrasing like, "A single one-shot Item can be played from your hand," would definitely directly suggest a limit.
