Hercules and Xena martial arts

Has anyone tried stating out their fighting styles in GURPS terms?

Xena is full out "Wushu-is-real" i.e. change all Art Skills to regular Combat versions. Note especially the Technique Mastery on Spinning Attacks.

Hercules was usually less flamboyant and harder to pigeonhole.

Hercules was simply "very good" at combat, same as Conan. Highly skilled in many battlefield skills, but no particular "style".

Do Pressure Points and Pressure Secrets cover the bit where Xena paralyzes people with pressure point strikes (including stopping breathing when she wants), then releases them from paralysis with another strike, or does she need some Afflictions or Innate Attacks with Side Effects or Symptoms in order to accomplish these feats?

Pressure Points to the torso will stop breathing and begin Suffocation as seen in Campaigns. The problem is that in Gurps the target gets a HT roll to resist every round so almost nobody will ever be in this condition fr more than a few seconds.

You could say that Xena's way of doing it doesn't allow Resistance Rolls but this is literally a Power you can not build in Gurps. Even the +300% "Irresistible effect" Enhancement will not do away with Resistance Rolls.

You can probably take it in such a way that none of her targets in the series are at all likely to resist before passing out and dying of lack of breath unless she releases them, as opposed to having an even chance to 'break out' in a few seconds.

You mean the GM is using some form of the Mook Rule? That's the only thing I can think of that would produce the effect you describe.

What about putting an affliction (with a significant negative to the resistance roll) negative Health rolls (only for pressure points/secrets) as a follow up to her pressure secrets/points attacks? Figure 6 Levels of -Health would have most targets fail. Then back it up with something like Ridiculous luck that lets her affect peoples health rolls for Pressure points on named NPCS, and Serendipity uses on unnamed ones (who probably only have a Health about 10 any ways).

Alternatively you could build the Hard to Resist Pressure Points/Secrets ability as a Hard Technique (requires trained by master) that would penalize the roll or as an imbuement of some sort.

You can give Xena the (rather expensive) wishing form of Super Luck from POWERS, limited to overcoming resistances to a paralyzing Affliction, so that each victim has to beat a 3. The odd occasion when this happens effectively means she just has to zap them the next turn.
