Default GURPS Books that SJG will probably not make, but totally should...

Atlantis 2/Modern Firepower XI: Ariel's Aquatic Arsenal

Hans-Christian Vortisch descibes the TL 8 weapons of the Little Mermaid's modernized kingdom in loving detail, from the biggest torpedoes to the smallest personal missiles. Pages of charts! It would be useful to me Anthro-Penguin Pirates to have detailed underwater combat rules for 4th Ed (GURPS Atlantis is 3rd Ed IIRC)

GURPS Zombie Apocalypse. Zombies are huge right now and World War Z hasn't even came out. SJG needs to ride the current wave -- it's only going to swell even bigger with WWZ hits the screen.

GURPS Mecha, GURPS Robots. Fourth Edition is sadly less than third for the giant robot genre.

GURPS Sumer - I always liked Sumer/Babylonia better than Egypt anyway, and 4th edition really needs to give me what I need. After all, I'm the customer and my wants and needs come first. Waaah!

GURPS Conan 4E, with detailed language rules (defaults, handling of 3E VH languages in 4E, etc), well-made Magic rules for the Conan setting, etc. Better Hyperborean Baton rules wouldn't hurt too, since the 3E rules were pretty silly.

Well-made manual overall for a pretty popular setting... just needed some fine-tuning in terms of rules.
I think it would be nice to have a well-made 4E edition for that.
