I'm feeling there's something about longshoremen always passing on the left, coz they'd have baggage hoiked up on their left shoulder. I've only got a vague memory, but maybe someone knows more.

LOL. I was thinking more along the lines of espionage trade crafts skills / techniques. Or former Browncoats always cutting their fruit before they eat it.

It's from Asimov i think and I believe he said that if a man pronounces "unionized" as "un-ionized" he's a chemist.

I believe it. After six quarters of college chemistry I had to stop and think to get that it referred to organized labor.

Relating to gender I can think of a couple of examples relating to professions.
Referring to a all Hares as female was a thread in the novel "I shall wear midnight" which I presume is based on real world folklore, but I can't find a reference.

Another example is for cattle workers to refer to all calves still on cows as Male, this is just verbal shorthand to differentiate them from the cows which are of course all female.

Again with animals referring to a female canine directly as a bitch is becoming less common outside of people who work with dogs all the time.
