I still suspect finding something the player is interested in and running a game with that as an element probably has the best chance of getting them interested. But to clarify, that's not what attracted me to GURPS. I GMed it before I ever played it specifically because I had a world I wanted to run and no other RPG I looked at was easily adaptable. For your player, maybe you could find an area they're knowledgeable about and use them as a source! Probably nothing is as likely to get someone interested in something as letting them be a part of creating it.
