I like the idea of a Genesis grenade (Star Trek 2)that will just spawn them suitably. Life from lifelessness and can allow you to have some really weird, special use creatures. No wondering how they got in there. no quibbling about what they eat etc etc....

Dig Maze.
Pull Pin.
Count to 3.
Toss in.
Creatures spawn to protect whatevers at the bottom.

Easy!

Id also be willing to see this as a GURPS spell, just for giggles.

Demonic entities are summoned from the depths of Hell or personally tear their way through the walls of reality, both of which are easier to accomplish underground.

Giant, mutant, dire, magical, and hybridized animals simply wander in from outside or are descendants of animals that wandered in from the outside. They have a mundane food chain within the dungeon wherein the glowing mosses and mushrooms are consumed by the small animals, and the large animals eat the small and humanoid creatures.

Humanoids move in from outside because they find the place defensible shelter. They bring extra treasure into the dungeon with them.

I don't see much of a market for professionals to capture outside entities and force or coerce them into living in the dungeon unless the tunnels were dug out explicitly for this purpose and the BBEG wants them to become monster-infested ASAP.

Chapter One: Capture the Monsters
A wizard has dug out his lair, filled the vaults and set the traps. Now all he needs are a few monsters. Lending his magical aid (scrolls, wisdom, unobtanium) , because there's no way the PC's could capture some of these things alone, he sets the PC's to gather dangerous creatures.

Chapter Two: Testing
With a variety of monsters captured, the PC's are now assigned to recruit adventurers for testing. Of course, recruiting is hard and the PC's are given to violence. A variety of challenges in the form of competing adventurers for the bulk of the chapter.

Chapter Three: Betrayal
Ah hell...the wizard is actually a Mad Wizard. Seeing the PC's triumph over the various potential testers, he decides they're the perfect one's to do the job. After a meeting scheduled at the bottom of the dungeon, he presents the with the new opportunity: escape or die.

A lot of the monsters in my dungeons have burrowed their way in from below. The ogres, trolls and goblins are faerie races who are able to enter the dungeon world through caves that lead to their world which occasionally opens and connects the two worlds. The demons and elementals are summoned and serve as guardians. Others like golems and living statues are created.

In D&D, the Demilich is a lich that's moved from being a whole corpse to just a floating skull. Add a floating torso lich, a floating pair of arms lich and a floating pair of legs lich, and there you go. As long as they can cast spells without mouths and see without eyes, it'll work great.

Well, that's either 4 or 6 liches, not 5. As I recall, head and body were a single robot for Voltron.

Or, high-level wizards research spells and make magic items. To make said spells or items, they needs bits and bobs from monsters. Rather than hunting high and low for these bits and bobs, they build dungeons to lure these monsters. Then, they send low-level adventurers into the dungeon to reap the monster bits. Some of these low-level adventurers become high-level wizards after killing enough monsters for their spleens. Cycle keeps going.

And, of course, why go to all of the trouble of catching monsters in the wild when some nearby dungeon already has all of these monsters just sitting there.
