how are critical hits with guns handled?

Like all critical hits with attacks, the target gets no defense. You also roll on the appropriate critical hit hit table (p. B556), either the regular one for most shots, or the Critical Head Blow table for head shots.

if a gun has rof of say 10. how many bullets hit with a critical. how many of those bullets are crits?

A critical has no effect on the number of bullets that hit.

The Basic Set does not seem to explain how to use the Critical Hit Table in situations where the critical 'hit' is actually several hits.

For a critical hit with a weapon with a RoF above 1, only the first bullet counts as a critical - you only roll on the table for the first shot, and the target can dodge to try to avoid the rest of the bullets, at the normal rate of one shot avoided per margin of success on the dodge.
