Specifically can 8 players work?

With a single game, no. Seven is technically doable if you REALLY want to, but I wouldn't advise it.

If you add an expansion or two, or mix two core games, an eight-player game becomes more plausible, but even then, you're probably looking at a long session. Every attempt to win the game has seven people who can possibly stop you, and you'll probably be shuffling the discards a couple of times which makes all those stopper cards available again.

My strong recommendation, if you have eight players, is two four-player games. That may not suit your desire to have everyone at the same table but it's more likely the games will end in a reasonable time.
