I do like the "magical underground ecosystem" conceit, because it gives excuses for gigantic cavern systems crowded with freakish giant glowing mushroom trees dripping with iridescent spanish-moss-oid stuff and the ground-level "plant life" being fungoid and lichen growths that begin to resemble corals, with the occasional sicky but perfectly mundane viney brambly thing trying to survive purely on everything elses phosphorescence.
Because it's cool looking, and because it tends to throw the party's Survival specialties out the window :) I loved Blackreach in Skyrim :)

A Japanese light novel/manga/anime with a really long name (Dungeon ni Deai o Motomeru no wa Machigatteiru no Darō ka?) postulates that the Dungeon (there's only one) is itself a living thing, and spawns monsters as part of its internal processes.

The D&D Companion Set posited that magic-users who built dungeons beneath their towers automatically attracted monsters with treasure to live in them. Then the magic-user could send some lackeys down into the dungeon once in a while and clear it, returning with the loot.
