I'd say no. If you did it just before the skill roll, then yes, but changes aren't retroactive.

As long as it's before you roll the dice against the improved skill level. If you have 20 points sitting around, need to make a really tough attack roll at effective skill 6, and decide to raise that skill by five levels to get an 11 . . . that's legit. If you have Luck, you could even do that after the first or second of your three rolls.
As for what counts: Shield is fine. Honestly, I'd even allow unarmed and ranged combat skills. It won't break the game.

Nope. It's legit the best way for the Knight to raise his combat skills, as he can do it for free.
However... if you're a stickler for squeezing every krogar from your PCs grippy little mitts, then you can certainly demand he train in town after the dungeon to 'maintain' that new skill level. |

Knights are immune to training time requirements, tuition fees, and teacher availability for melee skills. They have one and only one condition for getting better: Enough unspent points. As envisioned by the designer, knights really can stumble across a unique, overpowered weapon that requires a made-up, single-purpose DX/VH skill that costs $20,000 to learn from the Only Living Master . . . and say, "Screw this, I'm a natural!" and drop 40 points to rocket to DX+8 in it the first time they pick it up. It's a situational edge, but an edge knights are definitely meant to have.

The Knight, however, can just outright get Lightsaber Nunchuck-11 whenever he has a point available (and presumably has found a Lightsaber Nunchuck and knows that it's even an option to begin with). |
