Changing treasure sharing agreement during combat
Is this allowed or is what agreed upon before combat binding and can't be changed after combat has been started?

It is not allowed. The helper has no way of leaving the fight once he has agreed to help, even if circumstances change.
The players could make an additional agreement to trade Items after the fight (only Items, not Treasure cards) or to play GUAL cards received in the fight on each other if they are feeling generous. |

This is a case where I'm willing to be flexible (which is not to say that Clipper is wrong by a strict reading of the rules). If circumstances change, the helper is perfectly within his rights to ask for additional Treasure or some other consideration, and I'm not so dictatorial that I would say "But it has to be an Item in play," either. That strikes me as bookkeeping above and beyond the call of duty. If the helper goes from two Treasures to three Treasures, I'd just let him pick 'em as though three had been the agreement all along.
If the main player refuses to renegotiate, the helper is still committed to the fray, but he can certainly refuse to use his own one-shot cards or special abilities to make his side lose if he think he's being treated poorly.

Munchkin is all about backstabbing, betrayal, and general ridiculousness correct? Is a verbal contract binding by the strictest sense of the game rules? If I agree to give someone 2 treasures, is it technically legal for me to renig, give them nothing, and simply say "I lied"? (This would, of course, hurt my credibility for future negotiations ... but establishing trust ... or lack thereof ... is all part of the game right?)

The agreement made regarding treasures for helping is binding, you cannot renege. Anything else you agree to can of course be taken back, but you might as well paint a bulls eye on your chest.
