2: in which supplements can i find more information about the Grigori? particularly anything that would let me use them as a playable choir...

I'm not aware of any. There are a couple of spreadsheets, though - you can find them near the top of http://www.sjgames.com/in-nomine/resources.html

There's precious little official information about the Grigori, and the bulk of that is in GURPS In Nomine.

However, there's a lovely unofficial writeup of them at http://amadan.org/Innomine/Grigori.html – I use this in my own game.
