Rules regarding hands
Some cards will say that you get an extra hand but im not sure if that means that i can have more than 5 cards in my hand or if i can have like 3 hands so i can wield like 3 weapons. Can anyone clarify this for me?

You get an extra hand for using in holding items.
Like three weapons, or a three handed weapon. |

Also note that your 'hand' is different to your 'Hands'. The rules and cards always use a capital 'H' when referring to the things you hold weapons in and a lower-case 'h' when referring to the set of cards you hide from your opponents. So you will see cards that give you an 'extra Hand' and cards that increase your 'hand size'.
'Extra' (edit: specifically, 'Extra Hand', see below) is only used when talking about Hands, so Eben's post is correct in this case, but keep in mind that there are other wordings on cards that do refer to the number of cards in your hand instead. Looking for the capitalisation should always make it clear, though.

Clipper, I believe your second paragraph is incorrect as cards such as Portable Hole say you may "carry one extra card in your hand."
The differences in the card meanings are fairly clear and consistent. Either A) You may carry "X" more card(s) in your hand or B) You have one (or 2 or 3....) extra Hand(s) The differences of course being hand versus Hand and the latter making no reference to cards. |
