Chtulhu Cultists Class
About Chtulhu Cultists Class: rules says I cannot discard my Class if I'm a Cultist. But can I play another Class card, like Investigator, for example, and thus have my old Cultist card be discarded because of the No-More-Than-One-Class rule?

No. You can't discard your Cultist Class, so you can't play a new one without a card like Super Munchkin.

Re: Chtulhu Cultists Class
Let's ignore the Super Munchkin card for what I'm about to say below:
Just to be clear, you can't play a Class when you already have one, you have to discard your old Class first. In other words, you can't play a second Class then say, "Oh, wait, I have two Classes. I'll just have to get rid of one." |

And for an even MORE general statement: Munchkin does not, except in very rare cases, let intentionally you play a card to put yourself in an illegal situation even if you immediately resolve the illegality. To give another example, that's one reason Cheat! says you can play it along with an Item card -- because the Item might have been unplayable otherwise.
