Can Potion of Apathy be used on a monster-helper to make it leave the battle?

No. First of all, a Monster added to a combat is not a helper, as a helper is very specifically another player's character joining the combat to help the munchkin side. Also, a Monster can't select a helper, and the card makes the point that it can only be played after a helper is chosen. It also says that the munchkin (meaning character in this game) wanders away, and gets cards played to the combat back. Since Monsters can't play cards, that's further evidence that Potion of Apathy would only affect a player helping another player in combat.
