Going to try to find the self confidence I need to submit a quick quest. I was wondering if there is a veteran of these sorts of things who might know of a good sample outline (format) I could examine to learn how this is done properly?

It is something, strange, that this whole revival of The Fantasy Trip is making me feel like a fourteen year old again. And that is a long long way to go.

I did submit one but I don't think I can share that file directly. However, what I did is not a million miles away from my Dungeon Of The Month work. You get a bit more word count with the Quick Quests, but otherwise the general structure and map complexity is about the same. That's my experience so far, at least.

I'd say this one might be a fair baseline. You will have more space for description, events, and story, of course. And if your map isn't overly large and the word count stays within the limits, there may be space for artwork too.

I'd love to contribute to the official publications but am just too busy with other work related writing to do justice to the job of turning my campaign notes and so forth into submittable documents.
