Default Using Shape Earth

Is it possible to make a 2 yard hole below someone using Shape Earth and move nearby dirt around the surface of the hole to make a 2 yard high wall to surround the hole, all in one concentration?

Yes but its stated that the earth is moved out slowly enough that someone can move away.
It is not a disintegration spell so it does not suddenly vanish it is more like an invisible shovel or shifting sand.

Yes, but the idea is to move the dirt away from below the opponent so that they will stumble, while raising dirt around them simultaneously so they can't jump out right away. Plus, unless they take a wait action, how would they get to move on the turn that I'd be causing this, unless they took the wait action "move away when something happens in my area"

Yeah, shape Earth isn't that fast. They have to stand still and let you do it.

Unless you make the area very large its stated that it is too slow to do that.
It goes to great lengths to specify it wont do what your asking in the spell description. It is Move 2 which is slower then a normal person and it also says if you try to bury someone they can easily move next turn.

I guess using earth to air on the dirt below an opponent would be a better choice then?

Yep. That is a disintegration type thing and the earth underoof is just gone.
I would still give a retreating dodge/dive for cover roll to avoid falling in.
But its a lot more effective.

And note the high energy cost. Earth to Water might give similar results burning less FP.
