I think the best suggestion for the next mat was to have levels with bad stuff. Level 2 something good, level 3 something bad, level 4 something good, level 5 something bad, etc. Then you really have to pay attention and try to choose the path that works best for you. Also playing a go up a level or lose a level on an opponent could often work to your advantage.

The other good suggestion is to make the mat go out to level 20 for Epic Munchkin, but that might make the mat too big.

If we do another level mat like the Mat of Mayhem, that's a definite possibility - but would people actually want to play on a mat that would screw them over as often as not?

That's a litmus test I often apply to card suggestions, incidentally -- a lot of people, including me, will come up with a card that would be really evil to play on an opponent without thinking about how awful it would be to have that card played on themselves.

Maybe I was a little too over zealous with the bad stuff. Maybe just two bad levels (level 4 and 9) would be enough.
